Fuck it all....

Seriously. We CANNOT agree or find a decent town to live in so I'm going back to my fantasy of owning a cafe/cookie bakery. I'm waiting on a whole bunch of listing sheets on commercial properties that are no more than 2 hours from Manhattan.
I know I can do kick ass cookies, I know I'm excellent at hospitality , my marketing skills ROCK and Emily is going to school for business and marketing so I'll drag her with me since she doesn't know what she wants to do anyway...I suppose I should ask her first huh?


Black Forest Coffee
INGREDIENTS:
  • 6 oz hot coffee
  • 2 tbs chocolate syrup
  • 1 tbs maraschino cherry juice
  • Whipped cream
  • Chocolate shavings
  • Maraschino cherries
PREPARATION:
In a mug, mix coffee, syrup and cherry juice. Stir well then top with whipped cream, chocolate shavings and cherries.
Serves 1

As Yet Unnamed Coffee Drink
INGREDIENTS:
  • 2 cups hot coffee
  • 1/2 cup milk
  • 4 tbs honey
  • 1/8 tsp cinnamon

PREPARATION:
Heat everything until warm, but not boiling. Stir well to dissolve the honey, and serve.
Serves 3-4

As Yet Unnamed Coffee Drink 2
INGREDIENTS:
  • 8 cups water
  • 4 oz ground coffee
  • 4 oz brown sugar
  • 2 cinnamon sticks
  • 3 cloves, whole
  • 1 square of semi-sweet chocolate

PREPARATION:
Boil water in a saucepan, then add cinnamon, cloves, sugar and chocolate. When the mixture comes to a boil, skim off foam. Reduce the heat to a simmer, then add coffee. Steep for 5 minutes then serve.

As Yet Unnamed Coffee Drink 3
INGREDIENTS:
  • 4 tbs ground coffee (fine)
  • 1/2 tsp grated orange peel, dried
  • 1/4 tsp cinnamon
  • 1 inch piece of vanilla bean
  • 1/8 tsp ground cloves

PREPARATION:
Blend ingredients well. Brew by your usual method.
Serves 4

As Yet Unnamed Coffee Drink 4
INGREDIENTS:
  • 125ml ground coffee
  • 80ml chocolate syrup
  • 1 tbs cinnamon
  • 250ml milk
  • 60ml brown sugar
  • 1/4 tsp nutmeg
  • 1 tsp vanilla

PREPARATION:
Before brewing, combine coffee, cinnamon and nutmeg. Brew however you like. In another small saucepan, heat brown sugar, syrup and milk. Stir until sugar is melted and dissolved. Pour sugar mixture into hot coffee, and add vanilla.

As Yet Unnamed Coffee Drink 5
INGREDIENTS:
  • 1 1/2 cups hot coffee
  • 1 tsp molasses
  • 1/8 cup light cream

PREPARATION:
Combine in a mug, stir well to dissolve the molasses. Serve hot.

As Yet Unnamed Coffee Drink 6
INGREDIENTS:
  • 2 cups hot coffee
  • 1 1/2 tbs honey
  • 1 1/2 tbs sugar
  • 1 1/2 tbs sesame seeds

PREPARATION:
Heat ingredients together until honey and sugar are dissolved. Simmer for another 2 minutes. Strain out the seeds and serve into demitasse cups.
Serves 4

As Yet Unnamed Coffee Drink 7
INGREDIENTS:
  • 1 tbs canned pumpkin
  • 2 tbs vanilla extract
  • 1/4 tsp cinnamon, ground
  • 1 cup milk
  • 1/2 cup strong coffee, or 1/4 cup espresso

PREPARATION:
In a saucepan, heat milk and pumpkin until steaming. Stir in vanilla and cinnamon. Put mixture in a blender, and blend for 15-20 seconds until thick and foamy. Pour into tall glass, then add coffee (or espresso).

As Yet Unnamed Coffee Drink 8
INGREDIENTS:
  • 3 1/2 cups milk
  • 1/4 cup instant coffee
  • 1/4 cup brown sugar

PREPARATION:
Heat milk to almost boiling, then stir in coffee and sugar. When it's dissolved, serve in warm mugs.

As Yet Unnamed Coffee Drink 9
INGREDIENTS:
  • 3 oz white chocolate, chopped
  • 2 cups half n half
  • 2 cups hot coffee
  • Whipped cream

PREPARATION:
Heat the milk and chocolate together in a saucepan until melted and smooth. Stir in coffee and serve with whipped cream on top.
Serves 6

Cafe Borgia
(hot) 4 servings
  • 2 cups strong Italian coffee
  • 2 cups hot chocolate
  • whipped cream
  • grated orange peel (garnish)
1. Mix coffee and hot chocolate
2. Pour into mugs
3. Top with whipped cream and orange peel

Caribbean
(hot) 8 servings
  • 1 coconut
  • 2 cups milk
  • 4 cups strong coffee
  • 1 tablespoon sugar
1. Punch two holes in to coconut, pour liquid into saucepan
2. Bake coconut for 30 minutes at 300 F degrees
3. Break open coconut, remove meat, and grate.
4. Mix coconut meat, coconut liquid, and milk in a sauce pan
5. Heat over low heat until creamy.
6. Strain
7. Toast grated coconut under broiler
8. Mix milk mixture, coffee, and sugar
9. Pour into mugs, garnish with toasted coconut.


Coffee Float
(cold) 4 servings
  • 2 1/2 cups strong coffee
  • 2 teaspoons sugar
  • 2/3 cup cream
  • 4 scoops of coffee flavored ice cream
  • 1 large bottle of Coke
1. Sweeten coffee with sugar, and chill
2. Mix coffee and cream
3. Fill 4 glasses half full
4. Add one scoop of ice cream to each glass
5. Top with coke



European
(hot) 2 servings
  • 1 cup strong coffee
  • 1 egg white
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons half and half
1. Beat egg white until forms soft peaks
2. Gently add vanilla, and continue to beat to stiff peaks are formed
3. Place into 2 coffee mugs
4. Pour coffee over egg white
5. top with half and half


Grog
(hot) 6 servings
  • 3 cups coffee
  • 1/2 cup heavy cream
  • 1 cup brown sugar
  • 2 tablespoons softened butter
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon cinnamon
  • Peel of one large orange, broken into 6 pieces
  • Peel of one large lemon, broken into 6 pieces
1. Place one piece of each peel into cups
2. Mix butter, sugar, cloves, nutmeg and cinnamon
3. Mix coffee and cream
4. Pour both mixtures into cups and stir.

Irish
(hot) 2 servings
  • 2 cups strong coffee
  • 2 tablespoons orange juice
  • 2 teaspoons lemon juice
  • whipped cream
1. Mix coffee, orange juice and lemon juice
2. Pour into Irish whiskey glass
3. Top with whipped cream


Mediterranean (hot) 8 servings
  • 8 cups strong coffee
  • 1/3 cup sugar
  • 1/4 cup chocolate syrup
  • 1/2 teaspoon aniseed (tied in cheesecloth)
  • 20 cloves
  • 4 cinnamon sticks
  • whipped cream
  • orange and lemon twists
1. Place coffee, sugar, chocolate syrup, aniseed, cloves and cinnamon into a sauce pan
2. Heat to 200 F degrees over medium heat
3. Strain into mugs
4. Top with whipped cream and twists


Mexican Mocha
(hot) 4 servings
  • 1 1/2 cups strong coffee
  • 4 teaspoons chocolate syrup
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon sugar
  • 1/2 cup whipping cream
1. Put 1 teaspoon of chocolate syrup into each cup
2. Mix Whipping cream, 1/4 teaspoon of the cinnamon, nutmeg, and sugar.
3. Whip until you have soft peaks
4. Place the last 1/2 teaspoon of cinnamon into coffee, and stir
5. Pour coffee into cups, stir to mix in chocolate syrup
6. Top with whipped cream mixture.


Mocha
(hot) 4 servings
  • 2 cups coffee
  • 1/3 cup cocoa
  • 2 cups milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup whipping cream
  • dash cinnamon
1. Mix cocoa, sugar, coffee and milk in a sauce pan
2. Heat, over medium heat constantly stirring, until simmering
3. Remove from heat and stir in vanilla
4. Pour into cups, top with whipped cream and cinnamon


Nogged Coffee
(hot) 2 servings
  • 1 cup coffee
  • 1 egg yolk
  • 1/2 cup cream
  • dash nutmeg
1. Beat sugar and egg yolk together
2. Place cream into sauce pan, and heat over low setting
3. Whisk in egg mixture
4. Heat to 200 F degrees
5. Pour coffee into to cups, and top with cream mixture
6. garnish with nutmeg


Orange Coffee
(hot) 2 servings
  • 1 cup strong coffee
  • 1 cup hot chocolate
  • 2 orange slices
  • whipped cream
  • dash of cinnamon
1. Mix coffee and hot chocolate
2. Place one orange slice into each cup
3. Pour coffee mixture into cups
4. Top with whipped cream, and garnish with cinnamon



Spice Coffee
(hot) 8 servings
  • 8 tablespoons coffee grounds
  • 8 cups water
  • Peel of one large orange
  • Peel of one large lemon
  • 30 cloves
  • 4 teaspoons sugar
1. Place coffee and spices in coffeemaker's basket
2. Add water and brew
3. Add sugar to coffee and serve.

Turkish
(hot) 4 servings
  • 1 1/2 cups cold water
  • 4 teaspoons dark roast coffee (ground very fine)
  • 4 teaspoons sugar

1. Heat water in saucepan, add coffee and sugar when warm
2. Bring to boil
3. Pour half of the coffee into demitasse cups.
4. Return remaining coffee to stove, and allow to return to boil.
5. Spoon off foam, and gently place into each cup (don't stir)


Viennese
(hot) 4 servings
  • 1/2 cup chocolate
  • 2 1/2 cups strong coffee
  • 4 tablespoons light cream
  • 2/3 cup heavy cream
  • 1 teaspoon sugar
  • dash of cinnamon
  • dash of cocoa
1. Melt chocolate in sauce pan
2. Stir in light cream
3. Slowly add coffee, beating until frothy
4. In a cold bowl whip heavy cream and sugar
5. Pour coffee mixture into cups
6. Top off with heavy cream
Garnish with sprinkle of cinnamon and cocoa

Mocha Cinnamon Shake
  • 1 cup brewed gourmet coffee at room temperature
  • 1 cup chocolate ice cream
  • 1 cup milk
  • 1 cup crushed ice
  • 2 cinnamon sticks
  • 1 teaspoon ground cinnamon

Combine the gourmet coffee, ice cream, milk and crushed ice in a blender.
Blend it until it is all combined and serve.
Pour into two mugs and add cinnamon sticks.
Makes 2 servings


Mexican Coffee
  • 1 ½ cups double strength hot gourmet coffee (use 4 tablespoons coffee to 12 oz. of water)
  • ¾ teaspoons cinnamon
  • 4 teaspoons chocolate syrup
  • ¼ teaspoon nutmeg
  • ½ cup heavy cream
  • 1 table spoon sugar

Combine cream, nutmeg, sugar and cinnamon then whip.
Using four demitasse cups, put 1 teaspoon of chocolate syrup in each.
Stir the remaining ½ teaspoon of cinnamon into the the hot gourmet coffee.
Pour the coffee in the cups and stir.
Top with spiced whipped cream.
Makes 4 servings.

Café au Lait or Café con Leche

  • 1 cup strong dark roast gourmet coffee or espresso
  • 1 cup hot milk

simultaneously pouring equal amounts of hot, strong dark roast gourmet coffee and hot milk into a large cup.
The milk can either be heated in the microwave or stovetop.
The heated milk adds a special sweetness to this delicious drink.
The Cuban version is actually prepared with a cup of hot milk and a shot of Cuban coffee poured into it.
Sugar is a must to fully appreciate this drink.
Makes 2 servings.

Coffee Breakfast Drink
  • 1 tablespoon instant espresso or instant coffee
  • 2 cups of milk
  • 2 tablespoons of protein powder
  • 1 teaspoon of honey
  • ½ teaspoon vanilla extract

Combine the milk, instant espresso or coffee, protein powder, vanilla and honey in an electric blender until uniform.
Serve in tall glasses.
Makes 2 servings.

Coffee Frappe
  • 1 tablespoon instant espresso
  • 3-5 ice cubes
  • ½ cup of cold water
  • ¼ cup of milk
  • 3 teaspoons maple syrup

Combine in an electric blender the cold water and instant espresso at a high speed until a frothy consistency is achieved.
Pour into a glass with ice cubes then stir in the maple syrup to your taste.
Makes 1 serving.

Thai Iced Coffee
  • 1/3 cup whole gourmet coffee beans, dark roast or ¼ cup ground dark roast gourmet coffee
  • 2 cups of water
  • 3 cardamom pods (this adds the unique Thai flavor)
  • 1 tablespoon of sugar or maple syrup
  • Ice cubes
  • ¼ cup of half-and-half or evaporated milk


In your coffee bean grinder, grind the cardamom pods with coffee beans or if you are using ground coffee just mix them together.
Now brew this mixture with 2 cups of water.
Add sugar or maple syrup and let it cool.
Pour this into two glasses filled to the top with ice.
Add half-and-half or evaporated milk.
Makes 2 servings.




Americano - An espresso beverage made with one shot of espresso into a cup of hot water.
Cappuccino - A beverage made with a shot of espresso and equal parts steamed and foamed milk. The steamed milk is mixed with the espresso, but the foamed milk is sitting on top. Overall ratio is 1/3 espresso, 1/3 steamed milk, 1/3 foamed milk.
Chai - A spiced tea drink. Chai is usually made with black tea and cream, with spices such as ginger, cloves, cinnamon or caradmom. Tea prepared this way is common in India.
Doppio - A drink made with 2 shots espresso, and 1 shot hot water.
Espresso - A form of coffee made by drawing steam through ground coffee under pressure. Espresso is much richer and more concentrated than standard drip coffee. It's used as a base for a variety of popular drinks, such as cappuccinos and lattes.
Latte - A beverage made with a shot of espresso in a cup of steamed milk. Overall ratio is 1/3 espresso, 2/3 steamed milk.
Macchiato - A shot of espresso with just a dab of steamed or foamed milk on top.
